          Can you not replace the oil with butter, ensuring the ratio is kept the same?

              Yeah do that Ive seen oil instead and you can technically use it but it doesn't taste as nice!

                Ok this is the recipe

                6 eggs (seperated)
                240 g castor sugar
                5 tbsp Veg oil
                240g self raising flour
                1/2 tsp baking powder
                50g cocoa powder

                So if I replaced the veg oil - how much butter would you suggest?

                  I believe that most cake recipes call for equal weights of fat, flour and eggs and sugar (a deviation of 20% is acceptable).

                  A medium sized egg weighs c. 40g, so you have 240 g each of flour, sugar and eggs, therefore a recipe should call for 240g of fat.

                  However, I'm confused, as 5 tablespoons of oil would not weigh anywhere near 240g ?

                        Out of interest, what are the ratios of fat/flour/sugar/eggs that you have in a recipe you have been successfully using?

                          5 oz (150g)Butter - softened
                          5 oz (150g)superfine (castor) sugar
                          6 oz (175g)self-raising flour
                          3eggs
                          1 tspvanilla extract

                          I just add two Tbsp of Coco powder if making chocolate ones

                          and this makes 12 cup cakes

                            Well using the 20% deviation rule, either recipe would seem fine.

                            I'm not sure why they were only calling for 5 tbsp of oil in the recipe you had found previously?

                            If you were to use your usual recipe, I would consider adding an extra yolk

                                Depends how big the cupcake tin is? Check volume of a normal cupcake tin versus volume of the big tin. Might give you an idea on how to increase the volume accordingly.
