    Because it cooks in half the time, it doesn't dry out. It really was the best turkey and easier to carve too

    I spatchcocked my turkey last year, and it cooked in half the time. Was a right nightmare to do, mind, but worth it me thinks. It takes up less room in the oven, as it isn't so "tall" so you can cook other stuff at the same time.

    i just have a crown - desn't take long - i normally stuff under the skin with butter and herbs keeps it all lush and moist

    Having said that, I get my ex-MIL to cook it as it we all go to her house for Christmas dinner

    We all help out with buying/making the rest of it though...

    BTW Deepie, I cook chicken upside down too, for exactly the reason you quoted.
